How to prepare Garlic Avakkai Pickle Recipe | Garlic Mango Pickle | Aam Ka Achar


Raw Mangoes – 4 – 6 cups (chopped)
Sea Salt – 1 ½ cup
Red chili powder – 2 cups
Mustard Seeds Powder – 1 cup
Methi seeds powder – 1 tablespoon
Sesame seeds oil – ½ liter
Garlic Pieces – 1 cup
Turmeric powder – 3-4 tablespoons

1. Sour mangoes are good for this Avakai recipe. Before buying check their taste.

2. Sea salt is good for this recipe. Take sea salt and dry it in sunlight for at least 1 hour. When it is hot, grind it to a fine powder in a mixer jar and keep it aside.

3. Take 1 cup mustard seeds and 1 tablespoon methi seeds. Dry them in sunlight for 1 hour. Then, Blend by adding both like a powder. Keep this powder aside. Peel off all garlic pieces and keep them aside.

4. Take 10-12 garlic pieces and blend it well to a paste. Keep it aside.

5. Take raw mango pieces and clean them with a cloth. Don’t wash them with water. Keep them aside.

6. Take a mixing bowl; add 2 cups of red chili powder, 1 ½ cup salt, 3-4 tablespoons of turmeric powder, 1 cup mustard seeds and methi seeds powder. Mix them well. Add ½ cup oil and mix it well. Then, add raw mango pieces, garlic pieces, garlic paste and mix them all well. Then, add 6 cups of oil and mix it well. Close it and keep it aside for 3 days.

7. On the 3rd day, again mix it well. Add oil if necessary. Mix it well and store it in air tight container. Oil must float on it’s above. Then only it will be stored for 1 year.

9. Serve this with hot cooked white rice with ghee.

1. You must prepare salt and mustard seeds powder at least 1 day before. Then, making of recipe becomes easy.

2. Once mango pieces are chopped, they won’t be stored. Prepare it on the same day.

3. Use good colored red chili powder to prepare this recipe. Otherwise, the pickle color may vary. You can also prepare red chili powder by your own also well. Bring good colored and fresh dry red chilies and dry them in sunlight. Remove their stalk and blend them well like a powder. Use this powder to prepare pickles.
